You will need:
2 medium oranges 1 cup diagonally sliced hearts of palm 1/2 cup vegetable oil 1/4 cup extra virgin olive oil 1/4 cup raspberry vinegar 2 medium shallots, minced seasoned or iodized salt to taste 3 bunches watercress, stems trimmed What to do: 1. Peel & pith oranges with a knife, and cut into sections 2. Combine oranges and palm hearts in a bowl 3. In another bowl, whisk together oils, vinegar & shallots; season as desired 4. Combine with orange & palm 5. Cover & chill well 6. Before serving, arrange watercress on 6 salad plates 7. Spoon marinated orange & palm on top of watercress. Serves 6.
