My brother’s specialty. This one takes a while though, so be sure to plan for it!


The meat portion of the program:

2 1/2 – 3 lbs pork sirloin roast
1/2 teaspoon salt
1/2 teaspoon pepper
1Tablespoon oil (vegetable, olive, canola… whatever you use… for browning the roast so it doesn’t stick to the pan)
2 medium white onions, cut into quarters
1 cup rootbeer (NOT diet)
2 Tablespoons minced garlic

The sauce portion of the show:

3 cups rootbeer (NOT diet – it won’t taste right)
1 cup chili sauce

1. Brown pork, drain fat.

2. Put pork in crockpot. Add onions, 1 cup root beer, and garlic. Cook covered in crockpot on low for 8-10 hours or on high for 4-5 hours, adding a little water if it dries out.

3. 45 minutes before pork is finished, combine the remaining 3 cups rootbeer and the chili sauce in a saucepan. Bring to a boil, reduce heat and simmer for 30 minutes.

4. Shred pork and serve with rootbeer sauce & onions on sandwiches or as a roast with mashed potatoes.

Serves 3-4, maybe more.
