This one came from my friend Ali at work. She made this for a potluck, and it was spectacular!
You will need:
1 can garbanzo beans, drained
1 medium carrot, finely shredded
1 medium green bell pepper, diced
1/2 cup extra virgin olive oil
1 cup lemon juice
sea salt to taste
black pepper to taste
Combine olive oil and lemon juice; set aside.
Combine garbanzo beans, bell pepper, and carrot in a medium bowl. Add olive oil and lemon juice mixture; Mix well. Add sea salt and black pepper to suit your taste.
Serves 3-4, or more.
