You will need:
1 can garbanzo beans, drained
1 small/medium bell pepper, diced (your choice of color)
1/3 cup diced onion
1 cup grape tomatoes, halved
1/3 bottle light italian salad dressing -or- balsamic vinaigrette dressing, (whichever you prefer; you can use regular italian dressing if you aren’t watching calories.)
Salt and Pepper to taste.
Combine the garbanzo beans, bell pepper, onion, grape tomatoes and salad dressing. Add salt and pepper to taste. Give it a stir to combine ingredients once more before serving.
Makes a nice light lunch or a good side dish at dinner time.
