Acapulco’s Salsa Fresca

Got this one via email from Cheryl.

Salsa Fresca from

Acapulco Restaurant in Santa Barbara CA


2 large tomatoes, seeded and chopped

1 med onion, chopped

1 jalapeno pepper, seeded and finely diced

1 cup fresh cilantro, chopped

2 cloves garlic, pressed and then mashed in 1 teaspoon salt to create garlic paste

Juice of one l ime

V8 or tomato juice

Combine ingredients in a bowl and pour enough V8 or tomato juice to cover.  Let sit at room temperature for flavors to meld.   Add salt to taste.

Serve with tortilla chips.


This is a very forgiving recipe.  I don’t actually measure anything.  Adjust amounts to your own personal taste.  Makes about 2 cups.
