I took a bag of Tyson chicken breast strips, and a bag of steamable green beans and potatoes, cooked them individually and mixed them together on a plate for a yummy, inexpensive lunch.

Accidentally Awesome
I stumbled across something amazing today. I was making a Birds Eye Cheesy Chicken Voila skillet dinner, which is pasta, chicken, broccoli, carrots and corn in a cheese sauce. For some reason, I opted to toss in some celery, green pepper and onion. I’m so glad I did! I threw a handful of sliced almonds on top before I ate it, and my goodness, it was outstanding! I ate it all before it even occurred to me to take a photo. That’s the only downside.
Easy Dinner Idea
You will need:
1 package frozen meatballs (meat type/flavor of your choice)
1 package frozen potatoes (diced or some larger-type chunks work best)
Chopped onion to taste, if desired.
Fry the ingredients together in a large skillet using olive oil to keep food from sticking to the pan if need be.
We like Aidell’s meatballs. They have many different types and flavors, and we’ve yet to find one we didn’t like.
In Case You Haven’t Heard…
The Instant Pot is pretty amazing.
Though, I haven’t experimented with crazy-elaborate recipes yet, I really like being able to make a pork roast in an hour.

Small photo 3: To add veggies, de-pressurize the Instant Pot about 10 minutes prior to the meat being done, add your veggies, reseal, and continue cooking about 5-10 minutes, until the meat’s done.
Tammy’s Bean Salsa
My friend Tammy brought this to work one day… so good!
Bean Salsa: All cans are the regular 8 oz size.
1 can of diced tomatoes
1 can of corn
1 can of black beans
1 can of black eyed peas
1 small onion, diced
1 green pepper, diced (You can buy them in a small can)
Diced jalapenos to taste
½ cup Italian dressing
Garlic salt to taste
Dump everything into a big bowl together, give it a stir and serve it with tortilla chips!
